- Thesis title: Studies on the impact of novel triglyceride chemistry on the crystallisation of fats.
I undertook my undergraduate studies in Food Science and Nutrition, where I gained a vast amount of knowledge in several different areas. My main interests were food chemistry and biochemistry.
I then worked within the school as a laboratory technician for 6 months, and it was during this time I saw the advertisement for my current project.
My research interests include the use of ultrasound in monitoring crystallisation processes in food systems. In addition is the use of ultrasound to induce crystallisation in foods.
I am also interested in the impact of how novel fat blends impact the crystallisation of fats and whether they can provide benefits to confectionary products.
